In this mouth-watering blog, staff writer and rider Tom Vaux goes about creating some incredibly good recipe ideas for our new range of Meridian Nut Butters!

I love using Meridian Nut Butters, in fact I always having a constant supply in the cupboard. This is of course because they're tasty, but also they create an enjoyable way to include healthy fats and great flavours into any diet!

You can simply spread on toast, or create a more complex evening dish. I found all the flavours to be extremely versatile and easy to use.

Meridian butters are pure, with no added sunflower oil (like many other brands), but they taste brilliant! What you see is what you get, and I'm impressed!

Meridian offer 4 main nut butters:

Snacktime - Peanut Butter on Apple

If you're looking for a quick mid-morning snack, to bridge the gap between breakfast and lunch, then this could fit the bill.

Apple and Nut Butter. Simple but a real match made in heaven!

Ingredients:

Method:

  • Errr... pretty self-explanatory

Drink/Breakfast - Peanut Butter and Jam Smoothie

Smoothies are a great way to pack loads of macro and micro nutrients into your diet! Adding nut butter to these, adds some great healthy fats, and makes the shake thicker and more creamy!

Peanut butter and jam is one of my personal favourite flavour combinations; and post exercise it can be a great benefit to your body's recovery, with a good ratio of protein:fats:carbohydrates.

Ingredients (enough for 2 medium glasses):

  • 2 tbsp Nut butter (in this case Meridian Peanut Butter Smooth/Crunchy)
  • 1 Large frozen banana
  • ½ cup Milk (choose your favourite, I used a mix of coconut and rice milk)
  • ½ cup Mixed frozen berries (can substitute for other frozen fruits)
  • 4  Ice cubes

Method

  • Put it all in a blender, and whizz it up until smooth

*Top Tip - add a cup of porridge oats to make it a sustaining breakfast

Sweet Treat - Peanut Butter Fudge

So we all have a bit of a sweet tooth every now and again! This gem of a recipe is incredibly easy to make, and is really simple to make in small batches.

Ideal for when friends are coming round for a coffee, or as a sugary snack at your next event!

Ingredients (enough for 4 large pieces):

Method

  • Bring milk and sugar to boil
  • Boil for 2 mins 30 seconds. Continually stirring
  • Take off heat and mix in nut butter and vanilla until smooth
  • Add to a pre greased tray
  • Put in fridge to set

*Top Tip: Use a cupcake baking tray to achieve a classic shape

Main Course - Barbequed Chicken Satay Skewers

Everyone loves a good BBQ! Well this turns a standard skewered kebab into something super tasty with the addition of just one or two ingredients. The Nut Butter being the star of the show- high in protein from the chicken and nuts! Easy to prep in minutes or can be left to marinate!

Ingredients (enough for 2 kebab skewers):

Method

  • Mix nut butter and honey in a bowl until soft and creamy
  • Add in the soy sauce and olive oil, whilst continuing to mix
  • Cut chicken breast into 2 inch pieces
  • Coat all chicken pieces in the sauce in one bowl, then roll in a bowl of sesame seeds
  • Place on skewer, alternating chicken and pepper
  • When skewers are full, place on the BBQ at a medium heat until chicken is cooked through

*Top tip: Serve with sweat potato fries and a side of steamed green veg!

*Top tip 2: Try using Meridian Cashew Butter for a sweeter creamier flavour

The Meridian Nut Butter range is a super versatile line of products, which can be eaten simply on toast, and added to enhance recipes (and yes, eating straight from the pot is allowed!!)

Great nutritional benefits, and a really great taste!
